Tuna Sushi Cups: An Easy Sushi-Inspired Lunchbox Idea for Kids 🍣

If sushi is ALWAYS the answer when you ask what they want for lunch… these little Tuna Sushi Cups deserve a spot in the rotation. 🙌

They’re a fun one for lunchboxes, weekend lunches or making a batch ahead when everyone is getting a little bored of sandwiches.

What you'll need

- Cooked sushi rice

- Tuna

- Kewpie mayonnaise

- Spring onion, finely sliced

- Cucumber, diced

- Toasted sesame seeds

How to make them

Preheat your oven to 160°C.

Spoon the cooked sushi rice into a mini muffin pan and press it firmly into the base and sides, leaving a little dip in the centre to create your cup shape.

Bake for approximately 20 minutes, or until the rice cups are holding their shape.

While they're baking, mix together the tuna, Kewpie mayonnaise and finely sliced spring onion.

Once the rice cups are ready, allow them to cool before spooning the tuna mixture into each one.

Finish with diced cucumber, another little drizzle of Kewpie and a sprinkle of toasted sesame seeds. 

That's it!

Packing them for lunch

Once the sushi cups have cooled completely, pop a few straight into their lunchbox alongside fruit, veggies and their usual snacks.
