Easy Kid-Friendly Nachos Recipe

Ingredients

• 500g beef mince
• 1 small brown onion, finely diced
• 1 clove garlic, crushed
• 1 tin diced tomatoes
• 1 tbsp tomato paste
• 1 tsp mild taco seasoning
• 1 small grated carrot
• 1 small grated zucchini
• 1 tin black beans (optional)
• Corn chips
• Grated cheese
• Fresh cucumber and fruit for the sides

Method

Step 1: Cook the onion and garlic in a pan until soft.

Step 2: Add the beef mince and cook until browned.

Step 3: Stir through the grated carrot and zucchini.

Step 4: Add diced tomatoes, tomato paste and taco seasoning.

Step 5: Simmer for 10-15 minutes until thick and rich.

Step 6: Warm the insulated OmieBox container with boiling water for a few minutes before adding the hot mince.

Step 7: Pack the chips, cheese and fresh sides separately.
