Honey Joy Florentines

If you grew up in Australia, there's a very good chance Honey Joys made an appearance at just about every birthday party.

These Florentines still have that golden, crunchy Honey Joy goodness we all know and love, but with a layer of chocolate underneath that makes them feel just a little bit fancy (without any extra effort!).

They're perfect for lunchboxes, afternoon tea, parties or keeping in the fridge for those "I just need something sweet" moments.

Ingredients

- 5 cups cornflakes

- 120g butter, chopped

- 1 tablespoon honey

- ⅓ cup caster sugar

- 200g milk chocolate, melted

Method

1. Preheat your oven to 180°C (160°C fan-forced). Line two 12-hole patty pans with paper cases.

2. Place the cornflakes into a large mixing bowl.

3. In a saucepan over medium-low heat, combine the butter, honey and caster sugar. Stir until the butter has melted and everything is smooth. Bring the mixture to a gentle boil, then remove it from the heat.

4. Pour the warm honey mixture over the cornflakes and gently stir until all the flakes are evenly coated.

5. Spoon the mixture into the prepared paper cases, filling each one evenly.

6. Bake for around 10 minutes, or until lightly golden.

7. Allow them to cool in the tins for a couple of minutes before transferring them to a wire rack to cool completely.

8. Once cooled, carefully peel away the paper cases. Dip the bottom of each Honey Joy into the melted milk chocolate and place chocolate-side down onto a baking paper-lined tray. Leave until the chocolate has completely set.

- Pop them into an airtight container and they'll stay crunchy for several days.

- They're great for making ahead before birthdays or school events.

- Want a little extra crunch? Stir through a couple of tablespoons of chopped nuts before baking (if they're not heading into a nut-free lunchbox!).

- Keep them in the fridge if your kitchen is warm so the chocolate stays perfectly set.
