Easy Yoghurt Bark for Kids

If you’re looking for an easy snack to keep stashed in the freezer, this yoghurt bark is such a good one. 🙌

It’s creamy, crunchy, a little sweet and made with just a handful of ingredients. Greek yoghurt, berries, granola and peanut butter come together to make a snack that feels like a treat, but is easy enough to whip up for the kids any day of the week.

Even better, there’s barely any prep involved!

 

What you’ll need

- Greek yoghurt

- Frozen berries

- Fresh or extra frozen berries for topping

- Granola

- Peanut butter

- Honey, optional if you’d like it a little sweeter


How to make yoghurt bark

1. Mix your yoghurt and berries
Add Greek yoghurt and frozen berries to a bowl and mix together. If your berries are quite tart, you can add a little honey to sweeten it.

2. Spread it out
Line a tray with baking paper, then spread the yoghurt mixture into an even layer.

3. Add the toppings
Scatter over some extra berries and granola, then drizzle with peanut butter.

4. Freeze
Pop the tray into the freezer until the yoghurt is completely firm.

5. Break and enjoy!
Once frozen, break or cut the bark into pieces and serve straight away.


A few easy ways to mix it up

This is one of those snacks you can easily change depending on what you already have at home. Try swapping the berries for sliced banana, adding shredded coconut, changing up the granola or using another nut or seed butter.

You can also make a batch ahead of time and keep the pieces in an airtight container in the freezer, ready to grab when the kids are looking for something sweet.
