Ingredients
- 3 large wraps
- 6 slices cheese
- 6 slices ham
- Handful of chopped sun-dried tomatoes
- 4 eggs
- ¼ cup cream
- 2 tbsp chives or spring onion
- Grated cheese sprinkled on top
Method
- Preheat your oven to 180°C and lightly grease a 6-hole muffin tin.
- Stack the wraps, layering ham, cheese and sun-dried tomatoes between each one.
- Roll the stack tightly into a log.
- Slice into 6 even pieces.
- Place each piece into the muffin tin and gently separate the layers slightly.
- In a bowl, whisk together the eggs, cream and chives. Season lightly.
- Pour the mixture into each muffin, filling about halfway.
- Top with grated cheese.
- Bake for 20 minutes or until set and golden.
- Let them rest in the tin for 5 minutes before removing.

- Let them cool slightly before removing to help them hold their shape
- Don’t overfill with egg mixture - halfway works best
- Use a non-stick or well-greased tin to prevent sticking
- Press gently into the tin so they keep their structure
