This simple mac and cheese idea has quickly become one of our favourite lunchbox hacks for busy weeks.

The best part? You can make one big batch, divide it into portions, freeze it, and have warm lunches ready whenever you need them.

Perfect for school lunches, after-school snacks, or those weeks when life feels a little busier than usual.

Easy Homemade Mac & Cheese Recipe

Ingredients

  • 454g elbow pasta
  • 6 tbsp butter
  • 6 tbsp plain flour
  • 4 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp onion powder
  • Salt and pepper to taste

Method

  1. Cook the pasta according to the packet instructions.
  2. In a saucepan, melt the butter over medium heat.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Slowly whisk in the milk until smooth.
  5. Add the onion powder, salt and pepper.
  6. Continue stirring until the sauce thickens.
  7. Remove from the heat and stir through the cheese until melted.
  8. Add the cooked pasta and mix until well combined.
  9. Allow to cool slightly before dividing into portions.


Freeze Portions For Later

Once cooled, divide your mac and cheese into individual portions and freeze.

Having a few portions ready to go in the freezer can be a lifesaver on busy mornings. Simply grab one, heat it up, pop it into an insulated food jar, and lunch is sorted.

You can use silicone freezer trays or portion containers to freeze individual serves. This also makes it easy to portion out the right amount for little appetites.

Once frozen, transfer the portions into a freezer-safe container or bag so they're ready whenever you need them.

 

Perfect for Insulated Food Jars

One of our favourite ways to pack this recipe is in an insulated food jar.

Simply reheat the mac and cheese until piping hot, preheat your food jar with boiling water for a few minutes, empty the water, then fill with the warmed mac and cheese.

It helps keep lunch warm until break time and is a great alternative to sandwiches during the cooler months.

You can also add some fruit, veggie sticks or crackers alongside it for a balanced lunchbox that feels a little different from the usual routine.
