Classic Weet-Bix Slice, An Easy Lunchbox Favourite!

If there's one recipe that never seems to go out of style, it's a classic Weet-Bix Slice. It's one of those recipes many of us grew up with, and for good reason. It's quick to make, uses simple pantry staples, freezes beautifully and is always a winner in the lunchbox.

This version is inspired byΒ VJ Cooks, who has so many delicious family-friendly recipes. We gave it a try and it's safe to say it'll be making a regular appearance in our snack rotation!

Whether you're getting ahead with school lunch prep or just looking for an easy afternoon baking project, this one ticks all the boxes.

Ingredients

For the Slice

- 185g butter

- 1 cup sugar

- 2 tbsp cocoa

- 3 Weet-Bix, crushed (50g)

- 1 cup plain flour

- 1 cup desiccated coconut

- 1 tsp baking powder

For the Chocolate Icing

- 2 cups icing sugar

- 3 tbsp cocoa

- 50g butter, softened

- 2 to 3 tbsp boiling water

Method

1. Preheat your oven to 180Β°C fan-forced and line a slice tin with baking paper.

2. In a large saucepan over low heat, melt together the butter, sugar and cocoa until smooth.

3. Remove from the heat, then stir through the crushed Weet-Bix, flour, coconut and baking powder until everything is well combined.

4. Press the mixture firmly into your prepared tin.

5. Bake for 15 to 20 minutes, until the slice is cooked through but still slightly soft in the centre.

6. While the slice is baking, make the icing by mixing together the icing sugar, cocoa and butter. Add a little boiling water until you have a smooth, spreadable icing.

7. Spread the icing over the warm slice and leave to cool completely before slicing.

πŸ’› Cut once it's completely cool. This helps you get nice, clean slices that are easy to pop into lunchboxes.

πŸ’› Freeze individually. Place baking paper between the slices or freeze them in a single layer first before transferring them to a container. That way you can grab one whenever you need it.

πŸ’› Pack it straight from the freezer. It'll slowly thaw in the lunchbox and be ready to enjoy by morning tea.
