Bolognese Pinwheels

Looking for a lunchbox idea that's filling, freezer-friendly and guaranteed to disappear? These Bolognese Pinwheels are always a winner.

Made with savoury bolognese, flaky puff pastry and plenty of melted cheese, they're perfect for school lunches, afternoon snacks or an easy dinner with a side salad.

The best part? They're just as delicious cold, making them ideal for popping straight into the lunchbox.


Ingredients

- 500g beef mince

- 1 cup bolognese pasta sauce

- 2 sheets frozen puff pastry, thawed

- 1 cup grated tasty cheese, plus a little extra for the top

- 1 egg, lightly beaten (optional, for a golden finish)


Method

Preheat your oven to 200°C (180°C fan-forced) and line a baking tray with baking paper.

Cook the beef mince in a frying pan until browned. Stir through the bolognese sauce and simmer for 3-5 minutes until well combined. Allow the mixture to cool slightly before using. (Warm filling works best, but avoid using it piping hot as it can soften the pastry too much.)

Lay a sheet of puff pastry on a clean bench. Spread half the bolognese mixture evenly over the pastry, leaving a small border around the edges.

Starting from one long edge, roll the pastry into a tight log.

Using a sharp knife, slice into approximately 2-3cm pinwheels and place onto the prepared tray, leaving a little space between each one.

If using, lightly brush the tops with beaten egg and sprinkle with a little extra grated cheese.

Bake for 20-25 minutes, or until the pastry is puffed, golden and the cheese is bubbling.

Allow to cool slightly before serving or packing into lunchboxes.

- Swap beef mince for chicken or turkey mince if you prefer.

Storage

Store in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in the oven or air fryer until warmed through, or pack them cold in the lunchbox.
