Apple Pie Puffs

These Apple Pie Puffs are one of those recipes you'll come back to again and again. They're made with just a handful of everyday ingredients, take only a few minutes to prepare, and make the kitchen smell incredible while they're baking.

The flaky puff pastry, warm cinnamon and soft apple filling taste just like a homemade apple pie, but with a fraction of the effort.

They're perfect for popping into lunchboxes, serving with afternoon tea, or keeping in the freezer for those days when everyone wants a little something sweet.

You'll need

Apple Filling

- 50g softened butter

- 2 apples, peeled and grated

- 30g brown sugar

- 1-2 tsp ground cinnamon

Pastry

- 1 sheet puff pastry

- 1 egg, lightly beaten (for brushing)

Cinnamon Sugar

- 30g brown sugar

- 1 tsp ground cinnamon

How to make Apple Pie Puffs

1. Preheat your oven to 180°C and line a baking tray with baking paper.

2. Peel and grate the apples, then squeeze out any excess juice using your hands or a clean tea towel. This helps keep the pastry nice and crisp.

3. Mix together the softened butter, grated apple, brown sugar and cinnamon until well combined.

4. Spread the filling evenly over the sheet of puff pastry.

5. Roll the pastry into a log, gently flatten it, then slice into triangles.

6. Place the triangles onto your prepared tray and brush with the beaten egg.

7. Bake for 20-25 minutes, or until the pastry is puffed and beautifully golden.

8. While they're still warm, gently toss each puff through the cinnamon sugar mixture.

9. Enjoy warm, or allow them to cool before packing into lunchboxes.

Lunchbox tips 

These are delicious served at room temperature, making them a great little lunchbox treat.

Once completely cool, pop them into an airtight container for up to 3 days, or freeze them for up to 2 months. Simply allow them to thaw naturally or warm them for a few minutes in the oven or air fryer to crisp them back up.

A few easy variations

Want to change things up? Try adding:

- A handful of sultanas.

- Chopped walnuts or pecans.

- A sprinkle of nutmeg with the cinnamon.

- A drizzle of caramel sauce before serving for an extra-special dessert.

A simple way to reduce food waste
